There are many different of mooncake types, and each region has its own specialties. In China, the most common mooncakes are made with a filling of lotus seed paste and a duck egg yolk, symbolizing the moon. Other common fillings include red bean paste, jujube paste, and chestnut paste. In Taiwan, common fillings include taro, green bean, and mung bean paste. In Hong Kong, mooncakes are often filled with lotus seed paste, red bean paste, or green bean paste, and may also include a salted duck egg yolk.
